This is a staple vegan meal in our diet that we typically eat once a week.
Made with: black beans, tomatoes, peppers, onions, and topped with mango & avocado. We top it all off with a mix of olive oil, lemon juice, and tons of cilantro. It is all served on a bed of rice.
