Ingredients: multi-colored carrots, multi-colored beets, edamame, avocado, and snap peas.

Topped with a homemade Asian-inspired sauce: Mirin, garlic, fresh ginger, scallions and organic low sodium soy sauce.

Why Should I Eat A Colorful Diet?

Each fruit and vegetable has its own coloration due to phytochemicals - these are “natural bioactive compounds, which, in addition to giving many fruits and veggies their eye-catching hues, also promote good health”.

The more a fruit is colorful and vibrant, the healthier it is.

What Do the Different Colors Mean?

* This is a generalization so please keep that in mind *

RED - Rich in Vitamins C & A as well as antioxidants and potassium.

ORANGE/YELLOW - Similar to red fruits/veggies, they are rich in Vitamins C & A as well as potassium. They also are known for promoting good vision.

GREEN - Protect the heart and are rich in Vitamin K. They are also known for promoting good vision, strong bones, and healthy teeth. Dark green veggies (especially ‘leafy veggies’) are rich in fiber and antioxidants.

BLUE/PURPLE - Bring about good urinary tract health and promote the memory function.

WHITE - Like green fruits/veggies, they promote good heart health and are known to lower cholesterol levels.

All in all, it’s not just about WHAT fruits and veggies you eat, but how often you eat them. It’s important to have a diet that is plant-based, as you will be able to get the biggest health boost.
