Black Bean & Mango Rice Bowl

One of our go-to favorites because it is so quick and easy to make yet unbelievably nutritious.


Ingredients: 1 cup of rice, 1 medium onion, black beans, 2 cloves of garlic, mango, 4 medium sized tomatoes, cilantro, 2 limes, avocado oil, olive oil, and spices.

👨‍🍳 get your rice going first - we always use our instapot to make since it takes the longest.
👨‍🍳 chop the onion & garlic.
👨‍🍳 heat up a skillet on medium-high heat with avocado oil. While the skillet heats up, open up the black beans can, drain the fluids and rinse with water.
👨‍🍳 add onions & garlic to skillet and cook until they soften. While they cook, chop up the tomatoes & add to skillet.
👨‍🍳 add the black beans to the skillet and spice it up! We love roasted seasoning, fajita seasoning, salt, pepper, and paprika. Stir well
👨‍🍳 cut up the mango into small/medium sized pieces.
👨‍🍳 chop the cilantro and add to a bowl along with the juice of 2 limes & 1 tbsp of olive oil. Add some salt and pepper as well!
👨‍🍳 plate your meal! Rice on the bottom. Next layer is the black bean, tomato, & onions. Add the mango on top. Top with cilantro bowl mix.
