Fall Salad

Fall has officially arrived…

We felt inspired to put together our delicious fall staple: a simple yet filling salad for lunch.

Ingredients: Roasted Butternut Squash, Quinoa, Spring Mix, and Roasted Red Onions.

The more colorful a salad is - the better. It means you will be getting a VARIETY of nutrients from each ingredient.

  • Butternut Squash - this orange veggie is not only super healthy but is absolutely delicious when roasted in the oven. Butternut squash is known for its disease-fighting properties (and several studies have shown it can be a cancer-preventative food and lowers your risk of heart disease). It also can aid with weight loss, as it leaves you feeling full but is relatively low in calories. It is rich in both Vitamins A (good for promoting cell growth, eye health, and bone health) and C (immune booster).

  • Quinoa - it is high in protein and ALSO contains all 9 of the essential amino acids. It is also gluten-free, which is great for anyone with celiac disease or might have a gluten sensitivity. It leaves you feeling full and is rich in terms of iron & magnesium. It is also a metabolic booster, which likewise can help with weight loss. Not to mention, it is filled with antioxidants.

  • Spring Mix - the best part of a spring mix, is that it is a MIX, so it is filled with many different kinds of lettuces. They support your immune system and liver, and are rich in the following Vitamins: A, B, and K.

  • Red Onion - did you know that red onions are best eaten raw? They are PACKED with vitamins and minerals and cooking them will reduce their nutritious benefits. They contain Vitamins C, K and B6 in addition to being rich in folate, magnesium, calcium, potassium, and so much more. Not to mention, they add beautiful coloring to the salad or to your guac mix.
