Sweet potatoes are nutrient-packed and are not only wonderful for your gut-health but contain tons of cancer-fighting properties. They promote brain health, support your immune system and are wonderful in maintaining healthy eyesight.

RECIPE

Ingredients ~ broccoli, chickpeas, kale, 1 lemon, 1 red onion, and 2 sweet potatoes.

Dressing & Spices Ingredients ~ Salt & pepper, chili powder, garlic powder, EVOO, cumin, oregano, pure maple syrup, tahini, and turmeric.

👨‍🍳 Turn on oven to 400 degrees Fahrenheit.
👩‍🍳 Peel the potatoes and cut the red onion. Put both in a bowl and mix with olive oil, salt and pepper.
👩‍🍳 Then, line a baking tray with aluminum foil and add the veggies. Put in the oven for about 10 minutes.
👩‍🍳 Drain the chickpea can.
👩‍🍳 Cut the broccoli and add to the same bowl that you had put the sweet potato in along with some more EVOO and salt & pepper. Add to the baking tray after 10 minutes and then let it roast in the oven for an additional 10 minutes.
👩‍🍳 Spice time!! Mix together all these spices: cumin, chili powder, garlic, oregano, turmeric, and salt & pepper.
👩‍🍳 Warm up a skillet with EVOO and cook the chickpeas along with spices combination.
👩‍🍳 Next up: Kale! Add some kale to the bowl and add additional EVOO, salt and pepper. Add to the baking sheet and roast about 5 minutes in the oven.
👩‍🍳 Sauce: juice 1 lemon into a bowl, add 1/4 cup of tahini, 2 teaspoon of raw & organic maple syrup, and 2 tablespoons of water. Mix together well!
👩‍🍳 Serve it up!
