Veggie Plate
We made this delicious dinner earlier this week.
Ingredients: chickpeas, sweet potato, red onion, broccoli, lemon, tahini, organic raw maple syrup, and a spring salad mix.
Spices: salt, pepper, cumin, roasting seasoning, turmeric, and garlic powder.
Recipe:
1️⃣ Preheat oven to 400 degrees Fahrenheit (convection roast) and like a tray with aluminum foil.
2️⃣ Peel and cut up 2 sweet potatoes🍠and 1 red onion🧅. Add to a bowl with olive oil, salt, pepper and a roasting seasoning mix. Add to the tray and place in oven for 10 minutes.
3️⃣ Drain chickpeas and add to a separate bowl with the following seasoning: salt, pepper, cumin, turmeric, and garlic powder. Mix well!
4️⃣ Cut up some broccoli into bite-size pieces and add to the original bowl (where the potatoes and onions were previously placed). Add additional olive oil and salt and pepper. Add to the tray when 10 minute timer is up for another 10 minutes.
5️⃣ Heat up a skillet with some avocado oil and add the chickpeas. Cook to your liking 😃
6️⃣ Next, wash the spring mix and add to the bowl where the broccoli, potatoes and red onions were previously. Add some olive oil.
7️⃣ For the dressing on top, combine 1/4 cup of tahini, the juice of 1 lemon, 2 teaspoons of raw maple syrup, and water. Keep adding water until you get the consistency you want.
8️⃣ Plate all the ingredients and drizzle the dressing on top 🥰
