Tofu Vegetable Stir-fry

What do you do with all your leftover vegetables at the end of the week?

We always either pull the ingredients into a salad (which we call a ‘fridge salad’) OR we throw it together into a stir-fry, like we did with this recipe!

If you follow our page often, you would see that time and time again, we mention how important it is to minimize food waste. That is why we meal prep and buy exactly what we need for the week. However, we are only human. There are times we over-buy, so that is why we often turn to our favorite stir-fries and ‘fridge salads’.

For this recipe - we tossed some tofu along with sesame oil, rice vinegar and spices into one pan. In another, we tossed all of our leftover and beautiful veggies together (broccoli, corn, edamame, snap peas).

This dish was surprisingly filling despite not having the rice because we were definitely still getting enough carbs between the tofu and other food we had today.
