Butternut Squash Soup and Apple Walnut Salad

This is such a delicious meal for a cold day!

SOUP RECIPE

Ingredients: 1 small onion, 2 cloves of garlic, avocado oil, 1 small squash (we buy the frozen organic sliced squash - easier to use and it keeps all the nutrients from the day it was harvested), vegetable broth, seasoning of your choice

πŸ‘©β€πŸ³ Cut up a small onion and 2 cloves of garlic. If you are cutting up a fresh squash, do it at this point too (remove seeds and cut medium sized).
πŸ‘©β€πŸ³ Heat up a saucepan with a bit of avocado oil and then add the onion & garlic.
πŸ‘©β€πŸ³ Stir for a few minutes until they soften and add in the squash.
πŸ‘©β€πŸ³Then, we SEASON! We use salt & pepper, paprika, cumin, and a bit of roasting seasoning. We can never have too many spices.
πŸ‘©β€πŸ³ After a few minutes of stirring, add in the 2 cups of vegetable broth.
πŸ‘©β€πŸ³ Bring the soup to a boil and then lower the heat and cover it. Cook for 10 minutes.
πŸ‘©β€πŸ³ Pour into a blender and purée before serving.

SALAD RECIPE
Dressing -
🌿 1.5 tablespoon of extra virgin olive oil
🌿 1/4 teaspoon of honey or pure maple syrup
🌿 0.75 tablespoon of balsamic vinegar
🌿 Salt & Pepper

Salad -
πŸ₯— Organic spinach spring mix
πŸ₯— Gala organic apples
πŸ₯— Roasted and unsalted walnuts
