Butternut Squash Soup and Apple Walnut Salad
This is such a delicious meal for a cold day!
SOUP RECIPE
Ingredients: 1 small onion, 2 cloves of garlic, avocado oil, 1 small squash (we buy the frozen organic sliced squash - easier to use and it keeps all the nutrients from the day it was harvested), vegetable broth, seasoning of your choice
π©βπ³ Cut up a small onion and 2 cloves of garlic. If you are cutting up a fresh squash, do it at this point too (remove seeds and cut medium sized).
π©βπ³ Heat up a saucepan with a bit of avocado oil and then add the onion & garlic.
π©βπ³ Stir for a few minutes until they soften and add in the squash.
π©βπ³Then, we SEASON! We use salt & pepper, paprika, cumin, and a bit of roasting seasoning. We can never have too many spices.
π©βπ³ After a few minutes of stirring, add in the 2 cups of vegetable broth.
π©βπ³ Bring the soup to a boil and then lower the heat and cover it. Cook for 10 minutes.
π©βπ³ Pour into a blender and pureΜe before serving.
SALAD RECIPE
Dressing -
πΏ 1.5 tablespoon of extra virgin olive oil
πΏ 1/4 teaspoon of honey or pure maple syrup
πΏ 0.75 tablespoon of balsamic vinegar
πΏ Salt & Pepper
Salad -
π₯ Organic spinach spring mix
π₯ Gala organic apples
π₯ Roasted and unsalted walnuts
