Ginger and Carrot Soup

There are so many incredible health benefits to ginger.

As a result, we try to incorporate it often into our meals. It is an ingredient used in a lot of different cuisines and is even used often in alternative medicine practices!

Is an anti-inflammatory and antioxidant powerhouse.

RECIPE DETAILS

SOUP
Ingredients (all organic): 3 carrots, 1/2 sweet potato, 1 piece of ginger root, a handful or two of spinach, 1 shallot, and 1/2 a bunch of parsley.
Honey, a pinch of salt, avocado oil, and organic vegetable stock.

To prep, have all the veggies cut and ready to go. Heat up a saucepan with a bit of avocado oil on the bottom.
Combine the carrots, shallot, sweet potato, honey and salt in the saucepan. Then, grate the ginger into the saucepan.
Reduce to medium heat & cover the saucepan. Let it cook while stirring occasionally for 5-7 minutes.
Add 3 cups of vegetable stock and bring to a boil. Then, lower the heat and cook for 10 minutes.
Add to a blender and serve!

SALAD
Ingredients (all organic): salad mix (we usually like arugula and spinach), cranberries, almonds, and parsley.
➡️ Dressing: olive oil, honey, apple cider vinegar, salt & pepper.
