Tofu & Zucchini Noodle Bowl

Easy, simple and delicious.

Ingredients: extra firm organic tofu, 2 handfuls of cilantro, scallions, 2 small cucumbers, 2 zucchini, and handful of peanuts.

Sauce ingredients: 2 cloves of garlic, 1 lime, grated ginger root, chili-garlic sauce, natural peanut butter, rice vinegar, soy sauce, and toasted sesame oil.

RECIPE - STEP BY STEP:
1️⃣ Peel & mince two cloves of garlic and grate the ginger. Add both into a small bowl.
2️⃣ Cut up 1 handful of cilantro and add to the bowl.
3️⃣ Add the below ingredients into the bowl for the sauce:
- Juice of 1 lime
- 2 tablespoons of natural peanut butter
- 2 tablespoons of soy sauce
- 1 tablespoons of rice vinegar
- 1 teaspoon of chili-garlic sauce
- 1/2 tablespoon of sesame oil
4️⃣ Trim 2 zucchini’s and use a peeler to make noodles.
5️⃣ Heat up two skillets with avocado oil: 1 for tofu and the other for the zucchini noodles. Cut up the tofu in the meantime and once heated, add to the heated up skillet. Then, add the zucchini noodles to their own skillet.
6️⃣ Split the sauce between the two skillets. Stir often. While the tofu and zucchini noodles cook, cut up some cucumbers.
7️⃣ Once cooked, add the zucchini noodles, tofu, cucumber and fresh peanuts to a bowl. Add some cilantro and scallions on top for garnish!
